A versatile scratch cupcake mix that can be customized by using any Cocoa Classics® Cocoa Mix flavors!

Chocolate Cupcakes on Black

 1.25 cups all-purpose flour
 1.50 cups (7-packets) your favorite Cocoa Classics® Hot Cocoa Mix
 1 tsp baking powder
 1 tsp baking soda
 2 eggs
 0.50 cup vegetable oil or melted butter
 0.75 cup water

Preheat oven to 350° F.

In a mixing bowl, combine hot cocoa mix, flour, baking soda and baking powder.

Add eggs, water and oil, mixing until the batter is smooth with no lumps.

Pour batter into cupcake cups lined with cupcake liners, filling about 2/3 full. Tap pans lightly on counter to remove any trapped air and to level the batter.

Bake for 20 minutes, or until a toothpick inserted into the cupcake comes out clear.

Top with marshmallow cream cheese frosting.
